Skyr Pancakes

1 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 Tbs baking powder
1/2 tsp baking soda
1/8 tsp salt
3/4 cup siggi’s vanilla skyr
1/4 cup lowfat milk
1 Tbs sugar
2 eggs
In a large bowl, combine all the flour, baking powder, baking soda and salt.
In a separate bowl, whisk together skyr, milk, sugar and eggs.
Stir wet ingredients into the dry ingredients, while being careful not to over mix. Let the batter rest for about 10 minutes.
Heat a nonstick skillet over medium heat and add a dab of butter. This is a very sticky batter, so to better form the pancakes, use slightly damp fingers to carefully press the top down for a more even pancake.
Cook pancakes over medium heat until one side looks set and golden brown. Flip and cook until pancake seems cooked through. These pancakes rise quite a bit, so make sure they are cooked through.
Top with more skyr, berries, and a drizzle of maple syrup.
