Cured Salmon with Skyr

Ingredients
3 cups siggi’s Plain 0% Skyr
1 Tbs Kosher salt
4 Tbs red onion, finely diced
6 slices smoked salmon, roughly chopped
2-3 tsp fresh dill, lightly chopped
1 slice pumpernickel bread, toasted then crumbled
1 seedless cucumber
olive oil
2 Tbs salmon caviar, optional
Preparation
Season the yogurt with salt, red onion, and olive oil. You can also add some fresh dill here as well.
Arrange the seasoned yogurt in the bottom of a bowl and garnish with the salmon, pumpernickel crumble, cucumber, remaining dill, and caviar if using.
Drizzle a small amount of olive oil over the top and serve.
