baked skyr chicken tenders

              1 cup siggi’s 0% plain skyr
2 cloves garlic, minced
juice of 1 lemon
1 tsp salt
¼ tsp black pepper
1 lb chicken tenders
1 cup panko breadcrumbs
1 Tbsp olive oil
        Preparation
        
                      
                                
    Whisk together the skyr, garlic, lemon juice, salt, and pepper. Add chicken tenders and toss to coat. Refrigerate at least 2 hours or overnight.
Preheat oven to 500°F.
Toss the panko with the olive oil. Remove excess marinade from the chicken tenders and coat in panko mixture. Place on a baking sheet and bake for about 20 minutes, or until light golden brown and crisp.
Serve with skyr ranch dip.
