Avocado Egg Salad

Ingredients
1/2 ripe avocado
2 hardboiled eggs
2 Tbs siggi’s Plain 0% Skyr
salt & pepper to taste
2 slices bread
1/4 cup baby kale leaves
Preparation
In a bowl, combine the avocado, hardboiled eggs, and skyr and smash until well combined.
Season with salt and pepper to taste and top two pieces of toasted bread with the kale leaves.
